How to build a simple barbecue
It’s easy and cheap. I’ve even tried it in the park. All you need is a couple of bricks and a sturdy 8 cm deep tray. Crumple up some pieces of paper and put them in the baking tray along with some dry wood chips for kindling. Put some charcoal on and around the wood chips to make something that looks like a pyramid. Light the paper and wood chips. When the coals are blazing hot, put a metal cake rack on them. It doesn’t get much easier than that. Just prepare in advance thin slices of pickled fish, chicken, duck, beef, pork, or lamb, sauces for dipping, seasonings, and, of course, skewers – so that everyone can fry their own piece of choice. How to light a barbecue
There are two options for this:
- The most convenient is to arrange a tepee of rolled sheets of paper, dry wood chips and charcoal. This shape will ensure air circulation – which means good combustion. But most importantly, no chemicals or dry fuel, it gives off an extremely smelly smoke that soaks everything around it, including the food.
- The cheating method (I learned it in Japan) is to put a grate over a portable gas stove. Put 6-7 pieces of charcoal on the grate and a few more on top of them to make a pyramid, and then turn on the burner to full power. This treatment will ignite the coals almost instantly. When they’re hot, carefully remove the grate from the stove (check to see if the kids are turning around under your feet; if they are, yell for them to move away) and move it to the barbecue. You can do this with tongs or move the coals in a large pot. Place new pieces around and between the hot coals.
How to keep the barbecue under control
The most common problem barbecue lovers face is this: the food is charred on the outside and left raw on the inside. But you should have kept an eye on the heat from the coals! You need to rake the hot coals into a pile on one side of the barbecue – they will give a very strong, instantly scalding heat – and make a slope to the opposite wall of the barbecue where there will be a very thin layer of charcoal. This is like the maximum and minimum wattage at the stove. Use this simple tip and you’ll get things going!
Don’t let the flames come out of the coals – they will only burn the food.

So before you light it, check and double-check that the barbecue is firmly installed, well secured, and, most importantly, that children can’t get near it. There was a time when my buddy’s daughter once knocked a barbecue over on herself and broke her leg. And thank God the barbecue wasn’t on fire at that moment!
