Choosing the extra virgin olive oil to be used in your activity involves a series of evaluations related to the cost, quality, taste, use you plan to make of it.
We recommend that you always choose an Extra Virgin Olive Oil (abbreviated EVO) that already guarantees that it is a high quality product. Only this will allow you to enhance – without covering them – the flavors of your dishes and deliver to your customers an excellent result.
What you need to focus on is:
- Food cost of your dishes. If you have any doubts about how to calculate it, read this article that explains it to you.
- Oil to bring to the table: watch out for the law. If you have any doubt you will find all the rules explained in this article.
- It has a very low acidity (which also determines the quality) and a delicious scent: it is perfect for exalting without covering.
- It is composed mainly of fats, about 98%, while the rest is composed of chemicals including vitamins (especially E and K), calcium, iron, potassium, sodium and zinc.
- The energy content is about 9 kcal/gram.
- The fats contained in EVO oil are “good”, help to combat aging (polyphenols) and combat free radicals

EVO Oil: an eye for conservation
The oil rancids so you have to be very careful to respect some conservation rules. It must be said that a rancid oil is not harmful to health, but certainly does not have a good appearance or a pleasant taste so it should not be used.
Remember to:
- Always stopper it tightly, especially if you use large drums in the kitchen. The enemy number 1 is in fact oxygen;
- Find a cool place but do not put it in the fridge: it’s fine to keep it in the pantry, less well store it in the kitchen near the stove (if not the ready-to-use one).
- Keep it in the dark: the enemy number 2 of EVO oil is light. Always store it in the dark and use steel containers for the ready-to-use one. For table-top bottles, bring only if necessary for seasoning or if required, once you have finished using them, store them in the dark and cool.
- Never in plastic: even if the containers for the ready to use kitchen are often in plastic (which should be safe) it would be better to avoid them and prefer steel or dark glass.
